Chios or Samons Greek Gourmades Throubes Olives. Wrinkled Black Olives, als known as throubes, are fully matured olives that are not picked. They ripen on the tree. Nets are placed under the trees and the olives are caught when fully ripe. These olives are served as table olives with a drizzle of olive oil or sprinkle of oregano.
